Xmas Baking 2 - Chocolate Pecan Pie
We had some friends over yesterday and today - and since it's Christmas season I decided to try out slightlier festive baked treats - one of which was chocolate pecan pie, recipe from Martha Stewart's Everyday Food. It looked pretty straightforward, aside from having to make the pie crust - I have a slight aversion towards making pie crust (the pie-crust making procedure just seems like a make or break task, and my food processor happens to be a rather basic one not that great for pulsing large quantities of butter and flour etc)
Thankfully the pie turned out decent with good reviews from a few tasters - when it first came out of the oven the crusted chocolate mix was pretty hard, and I had thought the pie was a failure. But somehow after cooling it and chilling it in the fridge overnight, it became quite delicious the next day. Not sure why, but it was certainly a relief!
The scary part of making this was when transferring the liquid filled pie into the oven. Had to gingerly walk it to the oven but even then a little of the chocolate mixture still overflowed onto the pie crust. I may also look again for a healthier recipe next time - since this one requires quite a bit of light corn syrup; which probably can be replaced by healthier substitutes like honey; or even just brown sugar...
